A Greek potato recipe that is a tasty alternative to just roast potatoes! These potatoes are fluffy on the inside and lightly roasted on the outside, full of delicious Mediterranean flavours.

Greek Potatoes, chicken, salad and warm feta cheese!
I spent some of my childhood visiting Corfu, Greece on holiday as my Auntie lives over there. At a young age I got to experience the Greek culture, traditions, religion, music, wines and most of all the food!
I remember the first time I ever tried these Greek potatoes and…. ‘Oh my word’ so delicious! When I have taken my daughters over there I get to enjoy watching them experiences what I did as a young girl. So, when I cook these potatoes at home they always talk about their holiday in Corfu. Plus they leave empty plates and sometimes ask for more!
These potatoes are really easy to make and I tend to get my girls involved especially when peeling the garlic cloves.

Peel, wash and cut the potatoes into chunky chips/wedges and place into a baking dish.

Pour in 1 glass of water (approx 1/4 of a litre). Cut the lemon in half and squeeze in juice (make sure no stray pips fall in).


I use all the garlic cloves from one bulb as I really like garlic. Some like to use just half the cloves. Split the garlic cloves up, peel them and scatter them around the potatoes in the baking dish.
Pour a generous amount of olive oil over the Greek potatoes and add plenty of oregano, salt and pepper.
Cook the Greek Potatoes

Then, Cook in the middle of a medium to high oven on gas mark 5, 180 degrees. For approx 1 and a half hours. A good tip to getting them lightly crispy on the outside is to turn the potatoes occasionally whilst cooking.
What to serve with the Greek potatoes
These Greek potatoes are so tasty and they go with many things! I sometimes will cook chicken breasts with these Greek potatoes. But I prefer to cook a whole chicken. Plus, the left overs can be used as a meal the next day. So, In the picture below I pulled apart a whole chicken. Sliced up a lettuce, cucumber, tomatoes, pear and apple to make a delicious salad. And added some baked feta cheese.
Hayley’s handy tip
I do love feta cheese. But I love it even more when its baked. To bake it, place the cheese in foil, sprinkle oregano on top and cover in foil. Bake for approx 10 mins or until it’s squidgy lol (it’s delicious).

7-8 medium sized potatoes
1 garlic bulb
1/4 litre of water
1 lemon
2 tablespoons of dried oregano
1/2 cup of olive oil
Plenty of salt and pepper to taste
Directions
- Preheat the oven to gas mark 5 or 180/200 degrees.
- Peel, wash and cut the potatoes into chunky chips/wedges and place into a baking dish.
- Pour in water and cut the lemon in half and squeeze juice over the potatoes.
- Peel garlic cloves and scatter them around the potatoes in the baking dish
- Pour olive oil over the potatoes and add the Oregano, salt and pepper.
- Place the potatoes into the oven and cook for approximately 1 hour and 30 minutes, turning the potatoes occasionally until potatoes are golden brown.
